For 2 nights only, Chef Massimiliano Delle Vedove of 2-Michelin Star Smoked Room, Madrid, will join Chef Daniele Sperindio of GEMMA to present an exclusive menu celebrating contemporary European cuisine.

Chef Massimiliano will apply the techniques of smoke and embers to form an essential part of each dish, turning smoke into a form of seasoning, the finishing touch to his dishes. Served alongside, Chef Daniele presents a vibe-driven contemporary Italian menu and his signature dishes. The evening will feature dishes like Kombu-jime Charbroiled Lobster with Tosazu Beurre Blanc, and Orata Sea Bream with Sand Carrot Skin and Bouchot Mussel Chowder, amongst several other courses.

Chef Massimiliano is a seasoned culinary professional based in Madrid, Spain, renowned for his expertise in fine dining and his dedication to culinary excellence. With extensive experience working in Michelin-starred establishments across Europe, Chef Massimiliano has honed his skills and developed a deep passion for the culinary arts.

Currently, Chef Massimiliano serves as the Head Chef at Smoked Room, a prestigious two Michelin-starred restaurant under the Dani García Group. In this role, he oversees the daily operations of the kitchen, manages human resources, and contributes to the development of the restaurant’s brand through the creation of innovative dishes. His leadership was instrumental in the pre-opening phase of Smoked Room in Dubai, showcasing his ability to expand and adapt culinary concepts across different markets.

Chef Daniele is the Chef/Owner & Managing Director of the I’WA Group which includes 2 concepts, GEMMA and 1-Michelin starred Art di Daniele Sperindio, which has recently been awarded Gambero Rosso’s “Ristorante dell’Anno” for Best Italian Restaurant in the World 2024, where he offers his signature Conversational Cuisine.

Chef Daniele honed his culinary skills under the guidance of some of the best chefs in the world, including Chef Grant Achatz of the renowned 3 Michelin-starred restaurant Alinea in Chicago and Chef Yoshihiro Narisawa of the 2 Michelin-starred restaurant Narisawa in Tokyo.
